SOLUTION:

The inscriptions are parts of the first lines of Psalms, written in Aramaic. You can find the font on omniglot.com. The transliteration is 1-1 into Hebrew.

Aramaic is clued by what Strutter reads -- a quote from Monty Python and the Holy Grail. "Of course, Joesph of Aramithea!"

The Psalms are clued by "singing the praises."

Each snippet has one letter wrong, the penultimate letter. The incorrect letters spell NTRLNNGS, which sticks in your throat. In Semitic languages, vowels are not written in, so to get the word, you have to add in the vowels to get INTERLININGS.

As an added bonus, the Psalm numbers used, when turned into letters using A=1, B=2, etc, become REDFISHY.
