Mango Bread Ingredients: 2 cups flour, sifted 2 tsp cinnamon 2 tsp baking soda 1/2 tsp salt 1 1/4 cup sugar 2 eggs 3/4 cup oil 2 1/2 cups chopped mango (about 3 large) 1 tsp lemon juice 1/2 cup raisins Combine first 5 ingredients. In a small bowl, beat eggs with oil and add to the flour mixture. Stir in mangos, lemon juice and raisins. Turn into 2 greased 8x4-inch loaf pans and bake at 350F (325F for glass pans) for one hour or until a wooden pick inserted in the center comes out clean.
