Speakers and Food Demonstrators



* Erik Marcus - a public speaker and the author of Vegan: The New Ethics of Eating, an expose on the advantages of plant-based diets. He is one of today's foremost thinkers about the effects of food choices on human health and the welfare of farm animals.
* Mark Messina,Ph.D. - a nutritionist who has studied the health benefits of soyfoods in the treatment and prevention of chronic disease. He is the co-author of The Simple Soybean and Your Health, The Vegetarian Way, and The Dietitian's Guide to Vegetarian Diets: Issues and Applications.
* Ken Bergeron, CEC - a vegan chef who has won three gold medals at the International Culinary Olympics. He was chosen "Chef of the Year" by the Connecticut Chef's Association.
* Suzanne Havala, MS, RD, LDN, FADA - A licensed, registered dietitian and professional nutritional consultant who writes books and articles, appears on radio and television, and lectures to professionals and the general public. She is a co-author of the American Dietetic Association's position paper on vegetarian diets.
* Didi Emmons - the author of Vegetarian Planet and well-known as a chef in many of Boston's finest restaurants -- Hammersley's Bistro, The Cambridge House Inn, The Blue Room, and the DeLux Cafe. Didi has just opened her own restaurant, Pho Republique, in Cambridge.
* Bob LeRoy, MS, RD - holds an M.S. in Nutrition and Public Health and an Ed.M. in Community Nutrition Education. He is a Registered Dietitian and has served as Nutrition advisor to the North American Vegetarian Society since 1990.
* Sara Ellen Martin - Program Coordinator for the LivingEarth Learning Project. LivingEarth offers free presentations about animals and the environment to schools in New England.
